Three big pinches of this magic mixture make for a wonderfully nourishing, mineral-rich, umami-fragrant, base layer, and dare we say, medicinal soup. Many things can be added: boil up yesterday’s roast chicken bones, throw in leftover rice, oatmeal or vegetables.
